Ingredients

  • 1/2 kg - small Brinjals
  • 1/2 kg - onion, chopped
  • 6 flakes - garlic, peeled
  • 4 to 6 - dry Red Chillies
  • 1 tsp - Mustard Seeds
  • 1 tsp - Cumin seeds
  • 1/2 tsp - Turmeric powder
  • 2 tbsp - oil
  • salt, to taste
  • How to Make Stuffed Brinjal Fry:

    1. Wash the brinjals and slit into four, keeping it joined at the stalk end.
    2. Grind onion, garlic, chillies, mustard and cumin to a thick paste. Mix with turmeric and salt.
    3. Stuff the brinjals with this paste.
    4. Heat the oil and add brinjals.
    5. Cook covered on a low flame till done.
    6. Serve with chapattis or with rice and curry as a side dish.
