Ingredients

  • 1/2 kg - small brinjals
  • 1/2 kg - onion, chopped
  • 6 flakes - garlic, peeled
  • 4 to 6 - dry red chillies
  • 1 tsp - mustard seeds
  • 1 tsp - cumin seeds
  • 1/2 tsp - turmeric powder
  • 2 tbsp - oil
  • salt, to taste

How to Make Stuffed Brinjal Fry

  • Wash the brinjals and slit into four, keeping it joined at the stalk end.
  • Grind onion, garlic, chillies, mustard and cumin to a thick paste. Mix with turmeric and salt.
  • Stuff the brinjals with this paste.
  • Heat the oil and add brinjals.
  • Cook covered on a low flame till done.
  • Serve with chapattis or with rice and curry as a side dish.
