Ingredients

  • Brinjals (small) - 8
  • oil -3 tsp
  • Coriander leaves to garnish
  • For the stuffing:
  • Channa dal - 2 tsp
  • Urad Dal - 2 tsp
  • Tamarind paste - 1/2 tsp
  • Turmeric - 1/2 tsp
  • coriander - 2 tsp
  • Mustard Seeds - 1/2 tsp
  • Cloves - 3 or 4
  • Cinnamon - 1/2 stick
  • Red Chillies - 6
  • How to Make Stuffed Brinjal:

    1. Take a pan and put 1 tsp of oil.
    2. Once hot, add mustard seeds, channa dal, urad dal, cloves, cinnamon and coriander.
    3. Once toasted, add red chillies and remove from flame.
    4. Put a little turmeric and grind the whole mixture.
    5. Add tamarind paste to the mixture.
    6. Now take brinjals and cut them partially (3/4th) both vertically and horizontally so that you can stuff them.
    7. Stuff the brinjals with the paste and place in heated oil.
    8. Let them fry on a medium flame.
    9. Cover the pan with a plate and pour some water on the plate.
    10. When one side of the brinjal is fried, turn it the other way.
    11. Garnish them with coriander leaves and serve hot with rice.
