How to Make Stuffed Brinjal

  • Take a pan and put 1 tsp of oil.
  • Once hot, add mustard seeds, channa dal, urad dal, cloves, cinnamon and coriander.
  • Once toasted, add red chillies and remove from flame.
  • Put a little turmeric and grind the whole mixture.
  • Add tamarind paste to the mixture.
  • Now take brinjals and cut them partially (3/4th) both vertically and horizontally so that you can stuff them.
  • Stuff the brinjals with the paste and place in heated oil.
  • Let them fry on a medium flame.
  • Cover the pan with a plate and pour some water on the plate.
  • When one side of the brinjal is fried, turn it the other way.
  • Garnish them with coriander leaves and serve hot with rice.
