  • 5 - medium sized green peppers
  • 1 cup - grated Paneer or Chana
  • 1 cup - grated Potatoes
  • 2 tsp - Cumin seeds
  • 1 tbsp - cumin powder
  • 1 tbsp - coriander powder
  • 1 inch - ginger, grated
  • 2 tsp - chilli powder
  • 2 tbsp - finely chopped Mint leaves/pudina
  • 1/2 - Lime
  • salt to taste
  • Vegetable oil
  • How to Make Stuffed Capsicum green peppers:

    1. Halve the peppers and take the seeds off but leave the stalks (you can also take the top off a whole pepper and de-seed it for stuffing).
    2. Rub the peppers with oil, salt and place them in a baking tray.
    3. In a pan, heat three tbsps of oil, add cumin seeds and potatoes.
    4. Cover and cook until the potatoes are soft or cooked.
    5. Add ginger, cumin powder, coriander powder, chilli powder, salt, the paneer and cook for another couple of minutes.
    6. Turn the heat off, add mint and lime juice.
    7. Stuff the peppers with the potato-paneer mix and bake in a pre-heated oven for about 2-3 mins.
    8. Garnish with chopped mint and some grated paneer.
