  • 5 - medium sized green peppers
  • 1 cup - grated paneer or chana
  • 1 cup - grated potatoes
  • 2 tsp - cumin seeds
  • 1 tbsp - cumin powder
  • 1 tbsp - coriander powder
  • 1 inch - ginger, grated
  • 2 tsp - chilli powder
  • 2 tbsp - finely chopped mint leaves/pudina
  • 1/2 - lime
  • salt to taste
  • Vegetable oil

How to Make Stuffed Capsicum green peppers

  • Halve the peppers and take the seeds off but leave the stalks (you can also take the top off a whole pepper and de-seed it for stuffing).
  • Rub the peppers with oil, salt and place them in a baking tray.
  • In a pan, heat three tbsps of oil, add cumin seeds and potatoes.
  • Cover and cook until the potatoes are soft or cooked.
  • Add ginger, cumin powder, coriander powder, chilli powder, salt, the paneer and cook for another couple of minutes.
  • Turn the heat off, add mint and lime juice.
  • Stuff the peppers with the potato-paneer mix and bake in a pre-heated oven for about 2-3 mins.
  • Garnish with chopped mint and some grated paneer.
