Ingredients

  • tender Cucumber 2, medium size
  • fresh Curd - 3 cup
  • grated Carrot - 1 cup
  • mustard powder - 1/2 tsp
  • Sugar - 1 tsp
  • Raisins - 2 tbsp
  • Coriander leaves - 2 tbsp, chopped
  • Mint leaves - 2 tbsp
  • pepper to taste
  • salt to taste
  • How to Make Stuffed Cucumber Slices:

    1. Line a strainer with a thin cloth and pour the curd in it.
    2. Let it drain till about 1 cup of curd cheese is left in the cloth.
    3. Beat the curd cheese till smooth.
    4. Add salt, pepper, sugar and mustard.
    5. Stir in grated carrot, coriander, mint leaves and raisins.
    6. Trim away thin slices of cucumber from either ends and slit the cucumbers into halves, along their length.
    7. (Do not peel) Scoop out the core.
    8. Fill the cucumbers with the carrot and curd filling and chill in the refrigerator, at least for one hour.
    9. Serve cut into 5 cm thick slices.
