How to Make Stuffed Cucumber Slices

  • Line a strainer with a thin cloth and pour the curd in it.
  • Let it drain till about 1 cup of curd cheese is left in the cloth.
  • Beat the curd cheese till smooth.
  • Add salt, pepper, sugar and mustard.
  • Stir in grated carrot, coriander, mint leaves and raisins.
  • Trim away thin slices of cucumber from either ends and slit the cucumbers into halves, along their length.
  • (Do not peel) Scoop out the core.
  • Fill the cucumbers with the carrot and curd filling and chill in the refrigerator, at least for one hour.
  • Serve cut into 5 cm thick slices.
