Ingredients

  • 6-8 brinjals
  • 3 - green chillies
  • 1/2 tsp - jeera
  • small piece - ginger
  • 3/4 of a bunch - coriander leaves

How to Make Stuffed Eggplant Curry

  • Grind all the ingredients, except the brinjals, with a little water. Keep aside.
  • Cut the brinjals in four, leave the stem attached.
  • Stuff the brinjals with the paste.
  • Heat a little oil, add a little salt and a pinch of turmeric powder, then add the brinjals and fry them on high heat for 5-6 minutes.
  • Then reduce the flame, cover and cook for some time, until the brinjals soften - around 10-15 mins.
  • The stuffed brinjals are ready to serve.
