Ingredients

  • 4 - green peppers, medium size
  • 500g - minced Chicken
  • 1 - onion, chopped
  • 1 cup - cooked Rice (partially cooked)
  • 1/4 tsp - ground pepper
  • 1 - Clove garlic, chopped
  • 10 oz. - concentrated Tomato soup
  • 1/2 cup - water
  • 1 cup - emmenthal cheese, grated
  • How to Make Stuffed Green Peppers:

    1. With a small knife, cut off top of peppers, de-seed them and set aside.
    2. In a bowl, mix minced chicken, onion, rice, ground pepper and garlic.
    3. Stuff green peppers with mixture and place them in a circle in an rectangular container. Set aside.
    4. Mix tomato soup with water, pour over peppers and cook in microwave on high (100%) for 30 mins.
    5. Remove from microwave and sprinkle with grated cheese.
    6. Cover and let stand 5-10 mins until cheese is melted.
