  • 4 - green peppers, medium size
  • 500g - minced chicken
  • 1 - onion, chopped
  • 1 cup - cooked rice (partially cooked)
  • 1/4 tsp - ground pepper
  • 1 - clove garlic, chopped
  • 10 oz. - concentrated tomato soup
  • 1/2 cup - water
  • 1 cup - emmenthal cheese, grated

How to Make Stuffed Green Peppers

  • With a small knife, cut off top of peppers, de-seed them and set aside.
  • In a bowl, mix minced chicken, onion, rice, ground pepper and garlic.
  • Stuff green peppers with mixture and place them in a circle in an rectangular container. Set aside.
  • Mix tomato soup with water, pour over peppers and cook in microwave on high (100%) for 30 mins.
  • Remove from microwave and sprinkle with grated cheese.
  • Cover and let stand 5-10 mins until cheese is melted.
