Ingredients

  • 250 g - tender fresh Okra
  • 1 tsp - Red Chilli powder
  • 1 tsp - Dhania (coriander seed powder)
  • 3/4 tsp -mango powder (amchoor)
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - Cumin seed powder
  • 2 pinches - Asafoetida
  • Salt to taste
  • 1 tbsp - oil
  • How to Make Stuffed Okra:

    1. Wash, wipe and remove the tops and tips of okra. Make a lengthwise incision in each. Keep aside.
    2. Mix all the dry ingredients together.
    3. Stuff each okra with this masala, in the slit.
    4. Tie up each with a bit of string.
    5. Heat oil in a heavy pan.
    6. Fry few at a time, till crisp.
    7. Drain on kitchen paper to remove excess oil.
    8. Remove strings and cool to room temperature.
    9. Pack in a foil or leak-proof container.
    10. Eat with parathas or puris.
