How to Make Stuffed Pomfret

  • Split the fish on either side, and debone, keeping the fish intact.
  • Apply salt, crushed pepper and lemon juice.
  • Let stand for 15 mins.
  • Grind all other ingredients to a fine paste with vinegar - do not use water.
  • Apply paste evenly inside each fish, rubbing it in very gently.
  • Dab fish with flour on both sides and shallow fry.
  • Remove and serve with lemon wedge and French fries.
  • Alternatives:
  • Sliced tomatoes and onions may be stuffed with paste.
  • Fish can be braised in the oven, instead of fried.
  • Red chillies may be avoided if too spicy and substituted by paprika powder.
