Potatoes, medium sized, half -boiled - 6 - 8
Green chillies, finely chopped - 4
Onion, finely chopped - 2
Tomatoes, finely chopped - 2
Coriander, finely chopped - 1 cup
Ginger garlic paste - 1 tbsp
Garam masala - 2 tsp
Turmeric powder - 1 tsp
Oil - 3 tbsp
Shredded cheese (optional)
Salt to taste.
How to Make Stuffed Potatoes
Cut each potato into 2 and scoop out the inner portion.
Now, heat in a pan and shallow fry the potatoes until they are golden brown.
For the stuffing:
Heat oil in a pan, add onion and chillies to it. Saute until the onions turn pink. Then add the turmeric powder, ginger-garlic paste, tomatoes, garam masala and saute for 5 mins.
Add salt and stuff the mixture into the potatoes.
Place these stuffed potatoes in a pressure cooker and cook until 2-3 whistles.
Garnish with coriander and shredded cheese.
