Ingredients

  • 1 - Medium sized snake gourd, scraped, and cut into 2 inch pieces after removing the insides
  • 3 - Potatoes, boiled and mashed
  • 3- Medium sized onions, chopped
  • 3 - Large tomatoes, chopped
  • 1/2 cup - Coconut paste
  • 2 tbsp - Chopped, coriander leaves
  • 2 tsp - Ginger -garlic paste
  • 3 tsp - Chilly powder
  • 1 tsp - Spice powder/ garam masala
  • 2 tsp - Coriander powder
  • 1/2 tsp - Turmeric powder
  • salt to taste
  • 2 - Green chillies, chopped
  • 3 tbsp - Oil.

How to Make Stuffed Snake Gourd Rings

  • Heat the oil in a pan and saute the chopped onions until pink.
  • Now add the ginger garlic paste and saute for 2-3 mins.
  • Then add the chilly powder, coriander powder, spice powder, green chillies, coconut, salt and fry until the oil separates.
  • Now add 2 cups of water and let it boil.
  • Meanwhile, mix the mashed potatoes with 1 tsp chopped green chillies and 2 tbsp chopped coriander leaves.
  • Stuff the snake gourd rings with the mashed potato mixture.
  • Pack each ring tightly.
  • Now put the stuffed snake gourd pieces gently into the boiling curry. Cook on low until the gravy thicken and the snake gourd is cooked but firm.
  • Garnish with the chopped coriander leaves.
  • Serve hot with coconut rice or plain rice.
