Ingredients

  • For stuffing :
  • 1/2 tbsp - oil
  • 1/2 tsp - cumin seeds
  • 1/2 cup - finely chopped onions
  • 1/2 tsp - chilli powder
  • 1 tsp - salt
  • 1/2 tsp - garam masala
  • 1/2 cup - grated potatoes
  • 1/2 cup - grated carrots
  • 1/2 cup - green peas
  • 1/2 cup chopped coriander
  • For tamarind sauce :
  • 3 tbsp - tamarind pulp
  • 1 cup - hot water
  • 2 tsp - sugar
  • 1 tsp - salt
  • 1/2 tsp - chilli powder
  • 1 tsp - roasted cumin powder
  • For the dahi vadas :
  • 1 cup - beaten curd
  • 1 tbsp- sugar
  • salt to taste
  • 20 slices - white bread (edges trimmed)
  • oil for shallow frying
  • chilli powder to taste
  • 2 tsp - jeera powder
  • coriander leaves for garnishing.

How to Make Stuffed Vegetable Dahi Vadas

  • To make the stuffing:
  • Heat the oil and add cumin seeds. When they splutter add onion, ginger, chilli powder and garam masala. Fry for till fragrant.
  • Add rest of the ingredients for the stuffing. Stir, sprinkling a little water, until vegetables are cooked.
  • To make the tamarind sauce:
  • Add all the ingredients together and simmer in the pan till thick. Remove from fire and reserve.
  • To make dahi vadas:
  • Combine curd with sugar and salt and set aside.
  • Dip bread slices into water, squeeze. Mash the bread to become like a thick vada batter.
  • Make a round using the bread and put 1 tbsp of stuffing into it. Cover it up.
  • Shallow fry the vadas with oil on a tawa.
  • Arrange the vadas in the tray and pour the set dahi over them.
  • Garnish with jeera powder, salt and coriander leaves.
