Ingredients

  • 600 gms - raw Rice
  • 400 gms - Sugar
  • 2 inch piece - dry ginger(sukku)
  • 10 - Cardamom
  • oil to deep fry
  • How to Make Sugar Athirasam:

    1. Soak the rice in water for 2 hours. Drain the water and spread the rice on a clean cloth to dry. Powder the partly dry rice with sukku and cardamom.
    2. Sieve it to get a fine powder.
    3. Add 1/4 cup water in a thick bottom pan.
    4. Add the sugar and boil.
    5. When sugar melts after 5 mins, check the consistency by pouring the syrup in a cup of water. It should roll into a soft ball. This is the right consistency.
    6. Remove from the fire and add the rice flour.
    7. Stir well till you get a chappathi-like dough.
    8. Make small balls of the dough, spread some oil on the plate, place the ball on it to form small puris.
    9. Deep-fry in hot oil until it is golden in colour.
