How to Make Sukrunde

  • Wash and cook dal with 4 cups of water till soft but not mushy. Strain the cooking liquid (this can be used in rasam).
  • Add sugar to dal. When the mixture is slightly cooled, grind it till smooth.
  • Cook this mixture in a thick bottom pan, stirring all the time till it becomes a lump.
  • Add cardamom powder. Cool and shape into lime size balls.
  • Mix maida with besan, salt, turmeric powder and ghee. Add water and make a thick batter.
  • Dip the dal balls in this batter and fry in moderately hot oil till golden brown.
