Ingredients

  • 500 g - basmati rice, washed and drained
  • 500 g - chopped Mutton
  • 5 - crushed Cardamoms
  • 1 - Bay Leaf
  • 2 - small sticks of Cinnamon
  • 1 cup - sliced Onions
  • Salt to taste
  • 5 cups - water
  • 2 tbsps - oil
  • 1 tbsp - Ghee
  • 10 - Garlic Cloves
  • 1 - piece of Ginger
  • 3/4 cup - Milk
  • A pinch of Saffron
  • How to Make Sultanpuri Pulav:

    1. Pressure cook the mutton with 1 cup water, crushed cardamoms, bay leaf, cinnamon and 1/2 cup sliced onions with salt as per taste.
    2. Once cooked, remove mutton from the stock and reserve the liquid.
    3. Heat oil and ghee in a pan.
    4. Add 1/2 cup sliced onions, garlic and ginger. Fry till golden brown.
    5. Now add the pressure cooked mutton and fry till browned.
    6. In the pressure cooker, spread a layer of basmati rice. Spoon the fried mutton on top.
    7. Add second layer of rice.
    8. Pour the reserved stock and remaining water.
    9. Add milk with a pinch of saffron dissolved in it.
    10. Pressure cook for 20 mins.
    11. Let it cool. Serve hot with raitha.
