Ingredients

  • 1/4 kg - maida
  • 2 cups - powdered sugar
  • 1/4 kg - roasted gram
  • 1 cup - fresh grated coconut
  • 1tsp - cardamom powder
  • 50 g - khus khus
  • 2 tbsp - ghee
  • oil for frying

How to Make Surul Poli

  • Grind roasted gram into fine powder and add sugar powder then mix well
  • Take a pan fry khus khus and coconut in ghee till golden brown and aroma comes. And mix this with ground roasted powder.
  • Puri:
  • Mix flour with salt and oil. Add water to the flour and make a soft dough. Keep it aside for 10 mins.
  • Make small lemon sized balls of the dough and roll them into thick round shaped discs.
  • Heat oil in a heavy bottomed vessel. Once the oil is hot, slide the poori into the hot oil.
  • Using the spoon/ladle press it in the centre gently. Pooris will start to puff. Turn the poori fry the other side till light golden brown.
  • Remove from oil and keep it on tissue paper. Make sure the dough doesn't turn out sticky. But don't dust it with too much of flour, it spoils the oil.
  • Stuffing:
  • Fill it with the above mix.
  • Put mixture in a piping hot poori immediately and roll it. This should take only a few seconds. Now the surul poli is ready and serve it as a snack.
