  • 1.5 kg - brinjals
  • 3/4 kg - sugar
  • 1200 g - green chillies
  • 2 cloves - garlic
  • 4 - chillies
  • 1 tbsp - cumin seeds
  • 1 tsp - mustard seed
  • 1.5 bottle - vinegar
  • 3/4 bottle - sweet oil
  • A few - curry leaves
  • Salt to taste

How to Make Sweet Brinjal Pickle

  • Chop the brinjals and sprinkle salt on it
  • Mince ginger, garlic and green chillies
  • Keep aside half the minced ginger-garlic mixture
  • Grind with vinegar the rest of the minced masala and spices
  • Squeeze out the brine and remove the brinjal pieces and fry in a pan for a while
  • Heat oil, add the curry leaves and the ground masala and fry well.
  • Now add the fried brinjal pieces to the fried masala, the minced masala, set aside and rest of the vinegar and sugar
  • Simmer on a low fire, till the oil separates. Serve hot.
