Ingredients

  • 2 cups - cooked basmati rice
  • 1/2 tsp - cumin seeds
  • 1/2 tsp - ajwain seeds
  • 1/2 cup - sweet corn kernels
  • 1 cup - paneer, cubed
  • Few - curry leaves
  • Salt - to taste
  • Oil - as required
  • To grind:
  • 1 tbsp - coriander seeds
  • 1 tbsp - channa dal
  • 1 tbsp - urad dal
  • 2 - dry red chillies
  • 1 - cinnamon stick
  • 1 tsp - peppercorns
  • 1 tsp - fennel seeds

How to Make Sweet Corn and Paneer Rice

  • Dry roast the spices in the 'To grind' list into a fine powder and keep aside.
  • Heat enough oil and fry the cumin seeds, ajwain seeds and curry leaves.
  • Immediately add the cubed paneer and fry for few minutes.
  • Next add the sweet corn kernels and cook for a few seconds.
  • Add the spice powder and salt to the pan.
  • Cook for a few minutes on a simmer.
  • Finally add the cooked rice and toss gently until it is well mixed.
  • Serve hot with papads or chicken masala.
