Ingredients

  • 3 - large Sweet Potatoes
  • 4 - large carrots, peeled and chopped into big chunks
  • 1 tsp - chopped Mint
  • 1/2 tsp - all spice powder or Garam Masala
  • 1 tsp - chilli powder
  • salt and pepper to taste
  • 2 tsp - Lime juice
  • 2 tbsp - Butter
  • 3 tbsp - grated cheese

How to Make Sweet Potato And Carrot Bake

  • Boil the sweet potatoes, remove the skin and cut into thick slices.
  • Arrange the slices together with the chopped carrots in a buttered baking dish.
  • Sprinkle salt, pepper, chilli powder, mint, lime juice and spice powder over the carrots and potato slices.
  • Dot with butter all over and spread the grated cheese on top.
  • Bake in a moderate oven (355 degrees Fahrenheit) for 20-25 minutes.
  • Serve hot with any other meat dish and bread.
