  • 3 - large Sweet Potatoes
  • 4 - large carrots, peeled and chopped into big chunks
  • 1 tsp - chopped Mint
  • 1/2 tsp - all spice powder or Garam Masala
  • 1 tsp - chilli powder
  • salt and pepper to taste
  • 2 tsp - Lime juice
  • 2 tbsp - Butter
  • 3 tbsp - grated cheese
  • How to Make Sweet Potato And Carrot Bake:

    1. Boil the sweet potatoes, remove the skin and cut into thick slices.
    2. Arrange the slices together with the chopped carrots in a buttered baking dish.
    3. Sprinkle salt, pepper, chilli powder, mint, lime juice and spice powder over the carrots and potato slices.
    4. Dot with butter all over and spread the grated cheese on top.
    5. Bake in a moderate oven (355 degrees Fahrenheit) for 20-25 minutes.
    6. Serve hot with any other meat dish and bread.
