Ingredients

  • 300g - Sweet Potato
  • 300g - flour
  • 50g - powdered Sugar
  • 1.5 tsp - baking powder
  • 1 egg, large
  • 1.5 tbsp - Butter
  • 6 drops - vanilla essence
  • pinch of salt
  • Oil for deep frying
  • Coating for doughnuts
  • 3 tbsp - powdered Sugar
  • 1 tsp - Cinnamon powder

How to Make Sweet potato doughnuts

  • Wash sweet potato thoroughly. Boil in water till soft, peel and mash them without any lumps and keep aside.
  • Sift flour along with baking powder and salt.
  • Mash potatoes, powdered sugar and melted butter. Mix well and keep aside.
  • Beat egg well and add essence.
  • Add beaten egg and flour, mix alternately to potato mix and knead lightly (if the dough is too tight you can add few drops of milk).
  • Divide dough into equal parts and make each into a thick chapatti.
  • Cut out circles of 2 to 2.5 inches diameter, make a small hole in the centre,
  • Deep fry doughnuts till light golden brown in colour.
  • Remove and dust them with powdered sugar and cinnamon mix.
