Ingredients

  • 400 g - kolakeshiya or Sweet Potato
  • 2 tbsp - Ginger paste
  • 1 tbsp - Cumin seeds
  • 2 tbsp - cumin powder
  • 1 tbsp - Red Chilli powder
  • 6 - green chillies, slit
  • 1 tbsp - Turmeric powder
  • 1 tsp - Garam Masala powder
  • 1.25 cups - Coconut Milk
  • 2 tsp - Sugar
  • 3 tbsp - oil
  • 2 tsp - Ghee
  • salt as required
  • How to Make Sweet Potato Malai:

    1. Boil sembu or sweet potato, remove the skin and cut into medium slices.
    2. Blanch in turmeric water.
    3. Heat oil in an oven-safe bowl, add sugar and cumin seeds.
    4. Saute for 1 minute. Then add ginger paste, cumin powder, red chilli powder and saute again for 5 minutes.
    5. Add the sweet potato and slit green chillies. Stir for 2 minutes.
    6. Pour the coconut milk and cook for 2-3 minutes, then add salt.
    7. Sprinkle garam masala and ghee and serve.
