Ingredients

  • 10 small round brinjals
  • 2 tbsp - vinegar
  • 1 tbsp - brown sugar
  • 1 tsp - raisins, chopped
  • Salt to taste
  • Oil as required
  • To grind:
  • 2 medium sized onions
  • 2.5 cm piece ginger
  • 4 cloves garlic
  • 2 green chillies
  • 1 tsp - mustard seeds
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - chilli powder
  • 1/4 coconut, grated

How to Make Sweet sour brinjals

  • Wash brinjals and slit them into four without cutting them apart. Keep aside.
  • Heat a kadai on fire and add 3 tbsp - oil.
  • Fry the ground masala pasta to a golden colour. Remove.
  • In the same kadai add the raisins and fry for a second. Remove.
  • Stuff this mixture adding salt inside the slit brinjals.
  • Arrange all the stuffed brinjals in a shallow pan.
  • Sprinkle a little water and oil over them.
  • Cover and cook till brinjals are tender.
  • Add sugar and vinegar and simmer for a few minutes. Serve hot.
