Ingredients

  • 5- large red Tomatoes
  • 2 tbsp - Ghee / oil
  • 1/2 tsp - Jeera ( Cumin seeds )
  • 10- Curry leaves
  • 2- green chillies, chopped
  • 1/4 tsp - Hing ( Asafoetida )
  • 1/2 tsp - Red Chilli powder ( or to taste )
  • 1 tsp - Sugar ( or to taste )
  • 3/4 tsp - salt ( or to taste )
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - coriander powder
  • 1/2 tsp - Jeera powder
  • 1/2 tsp - Garam Masala powder
  • 1/2 cup - water
  • 2 tsp - fresh Coriander leaves
  • How to Make Tamatar Ki Launji:

    1. Blanch tomatoes in boiling water for 1 - 2 minutes. Drain and remove skin.
    2. Chop into small pieces.
    3. In a pan, heat ghee / oil and add jeera.
    4. When brown, add hing and fry a little.
    5. Add curry leaves, green chillies, chopped tomatoes and all the spice powders.
    6. Add 1/2 cup water, salt to taste and cook for 5 - 8 minutes.
    7. Serve hot, garnished with chopped fresh coriander leaves.
