Tamil Nadu sambar powder recipe is a popular side dish recipe about the masala mix used in sambar. Sambar is a popular recipe in the entire South India and especially Tamil Nadu has a special variant of it.

They use this special sambar powder masala to flavor the sambar and is made by roasting some particular spices. You can also learn how to make this Indian sambar masala at home to enhance the flavor of the sambhar next time you make it.

The spices and condiments such as coriander seeds, chana dal, toor dal, urad dal, fenugreek powder, asafetida and turmeric powder are all dry roasted in a very little oil. The sambar powder can be stored in air tight container and used when needed.


  • 50 g - red chilies (discard stalks)
  • 50 g - Coriander seeds
  • 6 tbsp - Chana dal
  • 4 tbsp - Toor Dal
  • 2 tbsp - Urad Dal
  • 1 tsp - Fenugreek
  • 1 tsp - black pepper corns, optional
  • 3 tsp - Asafoetida
  • 2 tsp - Turmeric powder
  • How to Make Tamil Nadu Sambar Powder:

    1. Smear the red chilies with very little oil and roast them.
    2. Roast all the ingredients from coriander to pepper corns without oil.
    3. Cool and powder all these together. Mix in the asafoetida and turmeric powders.
    4. Cool and store in an air tight container.
