  • 1 large - Brinjal
  • 4 - Green chillies
  • small Lime size - Tamarind
  • pinch of Hing
  • salt to taste
  • one small bunch - Coriander leaves
  • For tempering:
  • 3 tsp - oil
  • 1/2 tsp - Mustard Seeds
  • 2 or 3 - Red Chilli (optional)
  • pinch of Asafoetida (optional)
  • How to Make Tasty brinjal chutney:

    1. Cut brinjal into small pieces and cook in very little water.
    2. Cool and grind with tamarind, coriander leaves, green chillies, hing and salt to a smooth paste.
    3. Temper with mustard, red chillies and asafoetida in oil.
