How to Make Tasty Kaju Barfi

  • Soak cashewnuts in water for 2 hours.
  • Drain and blend the cashews to a fine paste using as little water as possible.
  • Pour water in a pan and add powdered sugar to make syrup.
  • Add blended cashew nuts and cook on slow to medium heat.
  • Cook while stirring continuously till a soft lump is formed.
  • Add ghee and cardamom powder and mix well.
  • Pour the mix on to a smooth surface and roll out (thin) quickly with a rolling pin.
  • Cut into squares/ diamond shapes and let it cool.
