100 g - ladies finger (bhindi)
100 g - small brinjal or a big one cut into small pieces
100 g - karela fully peeled off and dipped in water to remove some bitterness
100 g - potatoes cut into medium long pieces
100 g - cauliflower cut into medium pieces
50 g - carrot cut into long thin pieces
100 g - arbi peeled and cut into long thin pieces
1 l - cooking oil for frying
2 tsp - garam masala
1 tsp -amchur powder mixed with red chilli
How to Make Tawa Vegetables
Add oil in kadai/deep pan.
Now cut lady's finger, brinjal, karela on one side to make a pocket.
Fill in garam masala with salt. If you like, add amchoor also here for sour taste.
Fry all the above vegetables. Preferably all the vegetables should be dried and pre-baked in oven to remove some water.
Fry each lot of vegetables for 6 minutes each. Now mix these vegetables on tawa and sprinkle salt on these and mix gently.
Should be served with yellow dal if possible.
