Ingredients

  • 100 g - ladies finger (bhindi)
  • 100 g - small Brinjal or a big one cut into small pieces
  • 100 g - Karela fully peeled off and dipped in water to remove some bitterness
  • 100 g - Potatoes cut into medium long pieces
  • 100 g - Cauliflower cut into medium pieces
  • 50 g - Carrot cut into long thin pieces
  • 100 g - arbi peeled and cut into long thin pieces
  • 1 l - cooking oil for frying
  • salt
  • 2 tsp - Garam Masala
  • 1 tsp -amchur powder mixed with Red Chilli

How to Make Tawa Vegetables

  • Add oil in kadai/deep pan.
  • Now cut lady's finger, brinjal, karela on one side to make a pocket.
  • Fill in garam masala with salt. If you like, add amchoor also here for sour taste.
  • Fry all the above vegetables. Preferably all the vegetables should be dried and pre-baked in oven to remove some water.
  • Fry each lot of vegetables for 6 minutes each. Now mix these vegetables on tawa and sprinkle salt on these and mix gently.
  • Should be served with yellow dal if possible.
