  • 100 g - ladies finger (bhindi)
  • 100 g - small Brinjal or a big one cut into small pieces
  • 100 g - Karela fully peeled off and dipped in water to remove some bitterness
  • 100 g - Potatoes cut into medium long pieces
  • 100 g - Cauliflower cut into medium pieces
  • 50 g - Carrot cut into long thin pieces
  • 100 g - arbi peeled and cut into long thin pieces
  • 1 l - cooking oil for frying
  • salt
  • 2 tsp - Garam Masala
  • 1 tsp -amchur powder mixed with Red Chilli
  • How to Make Tawa Vegetables:

    1. Add oil in kadai/deep pan.
    2. Now cut lady's finger, brinjal, karela on one side to make a pocket.
    3. Fill in garam masala with salt. If you like, add amchoor also here for sour taste.
    4. Fry all the above vegetables. Preferably all the vegetables should be dried and pre-baked in oven to remove some water.
    5. Fry each lot of vegetables for 6 minutes each. Now mix these vegetables on tawa and sprinkle salt on these and mix gently.
    6. Should be served with yellow dal if possible.
