Ingredients

  • 1 cup - Frozen Corn kernels
  • 1 cup - Water
  • 2 tbsp - Sugar
  • 2 tsp - Tapioca flour
  • 2 tbsp - Coconut Cream (do not shake the can of Coconut Milk before opening, spoon out the thick Cream on top)
  • A pinch - Salt

How to Make Thai Corn Pudding

  • Boil water, sugar and corn kernels together.
  • Make a fine paste with tapioca flour and water.
  • Once the sugar dissolves, add this paste to the corn. Stir it continuously until it thickens.
  • Mix the coconut cream and salt together and bring to a boil over low heat.
  • Top the sweet corn mix with the coconut cream.
  • Serve chilled.
