Ingredients

  • 1 cup - Frozen Corn kernels
  • 1 cup - Water
  • 2 tbsp - Sugar
  • 2 tsp - Tapioca flour
  • 2 tbsp - Coconut Cream (do not shake the can of Coconut Milk before opening, spoon out the thick Cream on top)
  • A pinch - Salt
  • How to Make Thai Corn Pudding:

    1. Boil water, sugar and corn kernels together.
    2. Make a fine paste with tapioca flour and water.
    3. Once the sugar dissolves, add this paste to the corn. Stir it continuously until it thickens.
    4. Mix the coconut cream and salt together and bring to a boil over low heat.
    5. Top the sweet corn mix with the coconut cream.
    6. Serve chilled.
