Ingredients

  • 3 tbsp oil
  • 2 eggs, beaten with 1 tbsp water
  • 1 tsp garlic, chopped
  • 2 cups - spring onions, chopped
  • 4 cups - rice, cooked
  • 1 tbsp - fish sauce (optional)
  • 1 cup - coriander leaves, chopped
  • 1 cup - cucumber, diced
  • How to Make Thai egg fried rice:

    1. Heat 1 tbsp of oil in a large frying pan and add egg.
    2. Swirl, till set.
    3. Remove from pan and cut into strips and keep aside.
    4. Heat the rest of the oil in the same pan, add garlic and spring onions.
    5. Saute over high heat till glossy and add rice.
    6. Stir-fry over high heat till rice is heated through.
    7. Add fish sauce, coriander, omelette strips and mix well.
    8. Serve garnished with the cucumber.
