Ingredients

  • 1/2 packet flat noodles
  • 1 cup bean sprouts
  • 100 gms tofu (cut into cubes and lightly sauteed)
  • 6 to 8 mushrooms (washed well and cut into thin slices)
  • 6 to 8 florets broccoli
  • 8 to 10 cloves garlic (crushed)
  • 4 spring onions (finely chopped)
  • 1 medium sized orange carrot (cut into strips)
  • 5 to 6 baby corn (cut into thin strips)
  • 1/2 red, 1/2 green and 1/2 yellow capsicum (cut into thin strips)
  • 2 to 3 tbsp roasted groundnuts (crushed into small pieces)
  • 1 to 2 tsp red chilli-garlic sauce (or as per taste)
  • 2 tbsp soy sauce
  • 1 tbsp brown vinegar
  • 1 tsp sugar
  • 6 tbsp oil
  • salt to taste

How to Make Thai Fried Flat Noodles

  • Boil the noodles as per the instructions on the packet.
  • Heat oil in wok, add garlic and saute till pink.
  • Add the spring onions and saute for 2-3 mins or till pink.
  • Add mushrooms, carrots, baby corn and broccoli.
  • Saute on a high flame till the vegetables are done but crunchy.
  • Add the bean sprouts and salt.
  • Stir fry for 2-3 minutes.
  • Add the boiled noodles, tofu, capsicums, soy sauce, chilli sauce, vinegar, sugar and salt.
  • Mix well and cook for 5 minutes.
  • Serve hot garnished with coarsely ground peanuts.
