Ingredients

  • 4 cups - plain cooked Rice
  • 4 nos Garlic pods(chopped)
  • 4 tbsp - veg oil
  • 1 cup - Tofu (sliced into strips)
  • 1 no onion(sliced)
  • 1-2 nos Sweet Potatoes or white potatoes(diced)
  • 1/4 lb mushrooms(sliced)
  • 1-2 tomatoes(chopped)
  • 1 tsp - Brown sugar
  • 3 tbsp - Light soy sauce
  • 1/4 tsp - Curry powder
  • 1/2 tbsp - Turmeric powder
  • 1/4 tsp - Pepper
  • 2 - 3 nos green Onions (sliced)
  • 2 - 3 sprigs Thai basil(snipped)

How to Make

  • Heat oil in a pan.
  • Fry the garlic in it until browned.
  • Add tofu and onions and fry 2-3 mins.
  • Add the rice, mushrooms, potatoes, tomatoes, brown sugar and soy sauce and fry another 2-3 mins.
  • Add the curry powder, turmeric and pepper. Mix well.
  • Cut the green onions into pieces and sprinkle over the top, along with the snipped basil.
