  • 3 cups - water
  • 30-40 g - root ginger, washed
  • Sugar to taste

How to Make Thai Ginger Tea

  • Crush or bruise ginger with a mallet.
  • Place in a deep vessel, add water, put to boil.
  • Simmer for at least 7-8 minutes, till reduced to three-fourths.
  • Add sugar to individual cups, strain boiling tea into cups.
  • Stir and serve piping hot.
