Ingredients

  • 1 tsp - pepper Corns
  • 2 tbsp - dried shrimps
  • 1/2 tsp - shrimp paste
  • 2 tbsp - shallots, peeled
  • 5 cm piece - Ginger
  • 4 cup - fish stock
  • 150g - pumpkin, peeled and cubed
  • 150g - ridge gourd, peeled and cubed
  • 75g - baby Corn
  • 75g - straw or button Mushrooms
  • 150g - prawns, peeled
  • 2 tbsp - fish sauce (nam pla)
  • 30g - Spinach leaves
  • Basil leaves - few
  • 1/2 tsp - salt
  • How to Make Thai Vegetable and Prawn Soup:

    1. Pound all the ingredients from peppercorns to ginger to a paste. Bring the stock to boil. Add the paste and stir till well mixed.
    2. Add all the vegetables.
    3. When the soup begins to boil again, add prawns and fish sauce.
    4. When the prawns are cooked, add spinach and basil.
    5. Stir for few seconds and remove from fire.
    6. Serve immediately.
