Ingredients

  • 1/4 cup - Almonds
  • 1 tbsp - Poppy seeds
  • 1/2 tsp - Fennel seeds
  • 3/4 tsp - Black peppercorns (or to taste)
  • 2 - Whole green cardamom
  • 2 tbsp - Sugar (or to taste)
  • 3/4 cup - Milk
  • 1 cup - Water

How to Make Thandai Spiced Almond Drink

  • Soak almonds for 4 hours and peel off the skin.
  • Soak poppy seeds for an hour.
  • Dry grind fennel seeds, peppercorns, and cardamom into a fine powder.
  • Grind almonds and poppy seeds into a fine paste by adding a little water.
  • Add the dry spice powder to the almond paste and grind again by adding water a little at a time.
  • Add sugar to this paste and grind for a minute.
  • Strain with a muslin cloth or with a fine-mesh strainer.
  • Grind the residue again with the remaining water and extract the juice completely with the help of a strainer.
  • Add cool milk to this juice. Mix well and serve chilled.
