Tharyd is the Arabian version of a hearty meat and potato stew. Arabic bread is an important ingredient. Tharyd is a classic favourite during the Ramzan feast.

Ingredients

  • 1 kg. lamb
  • 1 tbsp. oil
  • 4 onions, chopped
  • 1 Clove garlic, crushed
  • 1 tsp. salt
  • 1 tbsp. pepper
  • 1 tsp. baharat
  • 1 bunch parsley, chopped
  • 1 small tin Tomato paste
  • 4 potatoes, peeled and quartered
  • 450 gms. green beans or vegetables of your choice
  • Arabic Bread

How to Make Tharyd (Fareed)

  • Cut meat into cubes. Heat oil in a pot and brown meat
  • Add onion and fry until soft. Add garlic, tomatoes, salt, pepper, baharat, parsley and tomato paste
  • Add a small amount of water so that the meat is almost covered
  • Cover pot and cook on a low heat for an hour. Add potatoes and beans and cook until meat is tender
  • Cut bread into small cubes and arrange in a serving dish
  • Pour the meat and vegetable over the bread cubes and serve hot
