Ingredients

  • 2- eggs
  • 2 tsp - milk
  • 1/2 tsp - corn flour or all-purpose flour
  • 1/4 tsp - red chilli powder
  • A pinch - turmeric powder
  • ( 1/4 tsp ) - salt
  • 2 tsp - cooking oil
  • For filling:
  • 1 tbsp - finely chopped tomato
  • 1 tbsp - finely chopped onion
  • 1/4 tsp - pepper powder
  • 1 tsp - finely chopped coriander leaves or curry leaves

How to Make Thattukada Style Madak Omelette

  • Whisk egg, milk, corn flour / all-purpose flour, red chilli powder, a pinch of turmeric powder and salt together in a medium bowl until soft peaks form ( quantity will be double ).
  • Lightly coat an omelette pan or dosa pan (11 - inches in diameter) or big skillet with cooking oil and heat over medium heat for 1 minute.
  • Pour omelette mixture into pan, spread it evenly and cook until mixture begins to set on bottom. Turn to low heat.
  • When it leaves from the sides of the pan and almost cooked, sprinkle the tomato - onion - pepper powder - curry leaves mixture.
  • Cook for 2 minutes on a low heat.
  • Fold omelette in half to enclose mixture, folding edges over to seal.
  • Gently press with a flat spatula and cook for 1 minute. Carefully turn other side and cook for 2 minutes on a low heat.
  • Remove from the heat and serve hot.
