  • 2- eggs
  • 2 tsp - Milk
  • 1/2 tsp - Corn flour or all-purpose flour
  • 1/4 tsp - Red Chilli powder
  • A pinch - Turmeric powder
  • ( 1/4 tsp ) - salt
  • 2 tsp - cooking oil
  • For filling:
  • 1 tbsp - finely chopped Tomato
  • 1 tbsp - finely chopped Onion
  • 1/4 tsp - pepper powder
  • 1 tsp - finely chopped Coriander leaves or Curry leaves
  • How to Make Thattukada Style Madak Omelette:

    1. Whisk egg, milk, corn flour / all-purpose flour, red chilli powder, a pinch of turmeric powder and salt together in a medium bowl until soft peaks form ( quantity will be double ).
    2. Lightly coat an omelette pan or dosa pan (11 - inches in diameter) or big skillet with cooking oil and heat over medium heat for 1 minute.
    3. Pour omelette mixture into pan, spread it evenly and cook until mixture begins to set on bottom. Turn to low heat.
    4. When it leaves from the sides of the pan and almost cooked, sprinkle the tomato - onion - pepper powder - curry leaves mixture.
    5. Cook for 2 minutes on a low heat.
    6. Fold omelette in half to enclose mixture, folding edges over to seal.
    7. Gently press with a flat spatula and cook for 1 minute. Carefully turn other side and cook for 2 minutes on a low heat.
    8. Remove from the heat and serve hot.
