  • 7 - Tomatoes
  • 1 cup - diced cooked Chicken
  • 2 - potatoes, cooked peeled and diced
  • Salt and pepper to taste
  • Sliced Cucumber and Spring onions for garnishing
  • Mayonnaise or salad dressing as required

How to Make Tomatino Stuffed Salad

  • Cut the tops of the tomatoes and scoop out the pulp. Dust tomatoes with salt and pepper. Mix diced meat with potatoes and moisten mixture with mayonnaise or salad dressing.
  • Stuff tomatoes with the mixture and replace caps.
  • Surround tomatoes with cucumber and spring onions.
