Ingredients

  • 3 - tomatoes
  • 1 tbsp - butter
  • Green chilli - 1/4 tsp
  • Sugar - 2 tsp
  • 2 tsp - spring onion and carrot
  • Ginger paste - 1/4 spoon
  • Salt as per taste
  • Corn flour - 1 tsp
  • Mint leaves - 6
  • 3 cups - vegetable stock

How to Make Tomato - Mint Soup

  • Blanch tomato, remove the skin, grind tomatoes and green chillies into a paste.
  • In a kadai, add 1 tbsp butter, tomato paste and boil till it becomes red in colour.
  • Then add stock, sugar, mint leaves, chopped spring onions, carrot, ginger paste, salt and finally, cornflour.
  • When serving, garnish with a few chopped coriander leaves.
