Ingredients

  • 200 g - Tomatoes
  • 1 cup - vegetable stock
  • 50 g - Capsicum
  • 50 g - grated cheese
  • 2 tbsp - Coriander leaves
  • /12 tsp - pepper powder
  • 1 tbsp - oil
  • How to Make Tomato and Capsicum Soup:

    1. Bake the capsicum in the oven or grill over a flame till the skin becomes black. Remove the skin and cut into fine pieces.
    2. Heat the oil and saute the onions. Mix the tomatoes and salt and let it boil for a while.
    3. Blend the onions, tomatoes, capsicum and make a thick puree.
    4. In a saucepan, put the vegetable stock, pepper powder and the puree and mix. Keep stirring for a while.
    5. Garnish with cheese and coriander leaves.
