Ingredients

  • 6 medium tomatoes, skinned, deseeded and finely chopped
  • 1 onion, finely chopped
  • 1/2 stick celery, finely chopped
  • 2 oz butter
  • 1 tsp - flour
  • 1 1/2 pint - food stock
  • 1 tsp - fresh thyme
  • 1 bay leaf
  • 2 tbsp - tomato puree
  • For garnishing:
  • 1/4 pint double cream

How to Make Tomato and Thyme Soup

  • Saute the onion and celery in butter for 5 mins and add the flour.
  • Let it cook for 1-2 mins.
  • Take the mixture off the heat, gradually stir in the stock, then the remaining ingredients.
  • Replace on the heat, bring to the boil and stir.
  • Simmer for 15-20 mins, strain, liquidize and re-heat.
  • Serve hot garnished with cream.
