Ingredients

  • 1 cup - Tomato puree
  • 2 cups - fresh spinach, torn
  • 2 tbsp - Butter
  • 1 large yellow onion, chopped
  • 1 tsp - minced Garlic
  • 1 1/2 cups - Milk
  • 1 tbsp - white Sugar
  • 1/4 cup - chopped fresh Basil
  • 1/4 tsp - freshly ground black pepper
  • 1 tbsp - Grated parmesan cheese
  • 1/2 tsp - salt

How to Make Tomato, Basil and Spinach Soup

  • Melt butter in a large saucepan over medium heat.
  • Saute onion and garlic for 3 mins.
  • Add milk and cook for 2 mins. Keep stirring occasionally.
  • Add tomato puree and sugar.
  • Mix well, cover and bring to a boil over high heat.
  • Reduce heat to low.
  • Simmer and cover for 5 mins.
  • Add spinach, basil, salt, pepper and simmer (uncovered) for 2 mins. Keep stirring occasionally.
  • Sprinkle with parmesan cheese, if desired.
