How to Make Tomato Coconut Curry

  • Grind the coconut, sliced onion, red chilli powder, 1 pinch turmeric powder and cumin seeds together well.
  • Chop the tomatoes and the green chillies into small pieces.
  • Add the paste to the cut tomatoes. Add 2 cups of water to it, coriander powder, curry leaves and 2 pinches of turmeric powder.
  • Cook till the tomatoes are totally cooked and smashed (if needed, add more chillies for spicy curry).
  • Serve with steaming plain rice.
