Ingredients

  • 4-5 - ripe tomatoes, chopped
  • 2 - large onions, chopped
  • 6 - flakes of garlic, chopped
  • 1/2 inch piece of Ginger chopped
  • 4 - green chillies, slit
  • A small bunch of coriander leaves, chopped
  • 1/2 tsp - chilli powder
  • 1/4 tsp - Turmeric
  • 4 - Cloves
  • 1 - Cardamom
  • 1/2 inch piece of Cinnamon
  • 4 - boiled eggs (optional)

How to Make Tomato Gravy

  • Heat oil and add cloves, cardamom and cinnamon.
  • Add onions, garlic and fry till golden brown.
  • Add tomatoes, green chillies, ginger, chilli powder and turmeric.
  • Simmer until the gravy thickens, becomes a deep red and the oil floats on top.
  • Sprinkle with coriander. You can add boiled eggs to the gravy before removing from the fire, if you like.
  • Serve with chapatti or rice.
