Ingredients

  • 1 cup - tomato, finely chopped
  • 4 - green chillies, slit
  • 2 tbsp - lime juice
  • 2 tbsp - coriander leaves, chopped
  • 2 tbsp - ghee or oil
  • 2 tsp - garlic, chopped and crushed
  • 1 tsp - mustard
  • 1/2 tsp - cumin seeds
  • 1/2 tsp - pepper, crushed
  • 1 tbsp - jaggery, powdered
  • few curry leaves
  • salt to taste

How to Make Tomato Saaru

  • Heat the ghee or oil in a thick pan. Add mustard and cumin.
  • When they splutter, add garlic and pepper. Fry till the garlic turns golden brown.
  • Add tomato and fry stirring and crushing, till it is reduced to a thick pulp.
  • Add 6 cups of water, green chillies, curry leaves, salt and jaggery.
  • When it begins to boil, reduce the heat and simmer for 5 mins.
  • Remove from heat. Add lime juice and coriander leaves. Serve hot.
