Ingredients

  • 1.5 cup - par-boiled rice
  • 1/4 cup - urad dal
  • 1 tsp - dry yeast
  • 1/2 cup - coconut milk
  • 1/2 tsp - sugar
  • salt to taste.

How to Make Traditional Sannas

  • Wash and soak, rice and dal separately overnight.
  • Drain and grind dal to a very fine paste adding coconut milk.
  • Grind rice coarsely (like very fine semolina), adding coconut milk.
  • Mix both rice and dal together after grinding.
  • Mix yeast with sugar and 1.5 tsp warm water for 10 mins.
  • When yeast ferments, add this to the dal and rice mixture with salt, beat well
  • Add a little coconut milk, if necessary. The batter should be fairly thick
  • Cover and keep aside for 7-8 hours, undisturbed
  • Spoon batter onto an idli stand.
  • Steam like idlis for about 20-25 mins.
  • Serve hot.
