Ingredients

  • Small tomatoes - 4 (cut into small pieces)
  • Frozen (or fresh) peas - 1/4 cup
  • Green chillies - 2 (optional) (cut into two lengthwise)
  • Medium size onion - 1 (finely cut into small pieces)
  • Garlic - 1 small piece (optional) (finely chopped)
  • Ginger - 1/2 inch (finely chopped or smashed)
  • Red chilli powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Garam Masala Powder - 1/2 tsp
  • Cashew nuts - 3-4 (optional) (cut into small pieces)
  • Bay leaves - 1-2
  • Cinnamon stick - 1
  • Cloves - 2
  • Salt to taste
  • Basmati Rice - 1 cup
  • Water to cook - 1.5
  • coriander leaves (finely cut) - to garnish

How to Make Traditional Tomato Rice

  • Cook the rice & keep it aside.
  • Heat 1 tablespoon of oil & fry the onion till it turns into brown. Add cashews, ginger and garlic, green chili, bay leaf, cloves & cinnamon stick till it fries.
  • Then add tomatoes & peas and also the above said powders.
  • Fry it till everything gets thickened.
  • Now add the rice & mix it well. Garnish with coriander.
