Ingredients

  • 2 cups - Basmati Rice
  • 2 cups - Mixed Vegetables (Potato, Carrots, Beans, Green Peas and Cauliflower cut into small cubes)
  • 1 - Onion, cut into thin long pieces
  • 1 cup - Yogurt
  • 2 - Tomatoes, chopped finely
  • 1 tsp - Red Chilly Powder
  • 1 tsp - Dhania Powder
  • 4 - Cloves
  • 1 inch long piece - Cinnamon
  • 3 - Cardamom
  • 1 tsp - Ginger Garlic paste
  • 4 - Green Chillies
  • 1 tsp - Garam Masala Powder
  • 1 tsp - Turmeric Powder
  • 1/2 cup - Mint leaves
  • 2 - Bay Leaves

How to Make Traditional Vegetable Biriyani

  • Soak the rice in water for 15 mins. Drain the rice, add 4 cups of water and cook till each grain is separate.
  • Marinate all the ingredients from 5 to 15 above in yogurt for 30 mins.
  • Fry the bay leaves and onions in ghee till golden brown.
  • Add the cut vegetables and saute for 2 mins.
  • Add the marinated masalas to the vegetables, add 1 cup of water, cover and cook till the vegetables are soft. Once the vegetables are cooked drain the excess water if any.
  • Mix the cooked rice with the vegetables and saute for 2 mins.
  • Serve hot with onion raitha.
