Ingredients

  • 2 cups - Basmati Rice
  • 2 cups - Mixed Vegetables (Potato, Carrots, Beans, Green peas and Cauliflower cut into small cubes)
  • 1 - Onion, cut into thin long pieces
  • 1 cup - Yogurt
  • 2 - Tomatoes, chopped finely
  • 1 tsp - Red Chilly Powder
  • 1 tsp - Dhania Powder
  • 4 - Cloves
  • 1 inch long piece - Cinnamon
  • 3 - Cardamom
  • 1 tsp - Ginger Garlic paste
  • 4 - Green chillies
  • 1 tsp - Garam Masala Powder
  • 1 tsp - Turmeric powder
  • 1/2 cup - Mint leaves
  • 2 - Bay Leaves
  • How to Make Traditional Vegetable Biriyani:

    1. Soak the rice in water for 15 mins. Drain the rice, add 4 cups of water and cook till each grain is separate.
    2. Marinate all the ingredients from 5 to 15 above in yogurt for 30 mins.
    3. Fry the bay leaves and onions in ghee till golden brown.
    4. Add the cut vegetables and saute for 2 mins.
    5. Add the marinated masalas to the vegetables, add 1 cup of water, cover and cook till the vegetables are soft. Once the vegetables are cooked drain the excess water if any.
    6. Mix the cooked rice with the vegetables and saute for 2 mins.
    7. Serve hot with onion raitha.
