  • 3 ripe bananas, large
  • 1 tin (450 g) - Cherries
  • 250 ml - Milk
  • 1/3 cup - powdered Sugar
  • 100 ml - Orange juice
  • 2 tbsp - Lime juice
  • 6 tbsp - golden syrup or Honey
  • a pinch of salt
  • 1 Egg white
  • 2 tbsp - grated Orange rind
  • Lime slices and Mint springs to garnish
  • How to Make Tropical Banana Freeze:

    1. Mash the bananas with lime juice.
    2. Add orange juice, golden syrup or honey and salt. Mix well.
    3. Beat the egg white till frothy.
    4. Add the sugar little at a time, beating well after each addition.
    5. Fold this into the banana mixture.
    6. Drain the cherries from the syrup.
    7. Remove the stones and chop finely.
    8. Mix with orange rind and add to the banana mixture.
    9. Pour the mixture in shallow containers and place in freezer.
    10. When it is half set, remove from freezer and whisk till light. Return to freezer.
    11. Transfer to refrigerator shelf 15 minutes before serving.
    12. Scoop into goblets and serve with lime slices and mint sprigs
