Ingredients

  • 4 - Potatoes
  • 3 - green onions, thinly sliced
  • 2 tbsp - Butter
  • 1/2 cup - hot Milk
  • 1/2 tsp - salt
  • Black pepper powder
  • Nutmeg powder
  • Paprika powder
  • 4 - slices bacon
  • 2 tbsp - grated parmesan cheese
  • 2 tbsp - grated cheddar cheese
  • How to Make Twice Bake Potatoes:

    1. Arrange potatoes in microwave-safe dish. Pierce with a fork in a few places. Microwave, uncovered, for about 10 mins on high power.
    2. Rearrange potatoes after 5 mins. Turn them over.
    3. Keep them covered and let stand for at least 7 mins (potatoes will continue to cook).
    4. Combine butter and green onions in a microwave-safe dish.
    5. Microwave covered at high power for at least 1.5 minutes or until onion is soft.
    6. Place bacon on paper towel on a microwave-safe dish.
    7. Microwave, covered with paper towel at high power for 4-5 mins or until almost crisp.
    8. Let stand for a minute. Crumble.
    9. Cut potatoes in half, scoop out pulp.
    10. Mash potatoes with butter, green onion mixture, milk or half and half and seasonings until light and fluffy.
    11. Add bacon.
    12. Spoon potato mixture into shells. Arrange on microwave-safe dish.
    13. Sprinkle both the cheese. Microwave, uncovered at high power for about 5 mins or until potatoes are hot and cheese is melted.
