Ingredients

  • 3 cups - All-purpose flour/Maida
  • 1 tbsp - Oil
  • Salt
  • Oil for Deep Frying
  • For stuffing:
  • 1 cup - Whole black urad dal
  • 1 - Onion (chopped)
  • 2 - Green chillies (chopped)
  • 1/4 cup - Coriander leaves (chopped)
  • 1 tsp - Chaat masala
  • 1/2 tsp - Ajwain seeds
  • 1/2 tsp - Cumin seeds
  • Salt
  • Oil

How to Make Urad Dal Ki Kachori

  • Soak the whole urad dals for at least 6 hours.
  • Drain the water and grind as a coarse paste (Don't add water).
  • Heat oil, crackle the ajwain seeds and cumin seeds.
  • Add the chopped onions, chopped green chillies and saute until the onions turns translucent.
  • Now add the urad dal paste, chaat masala and salt and cook everything on simmer until the filling turns dry.
  • Finally add the chopped coriander leaves and turn off the stove.
  • Meanwhile knead a soft and stiff dough with maida, oil and water and keep aside for half an hour.
  • Make medium sized rolls from the dough. Roll gently with the rolling pin.
  • Place 2 tsps of the urad dal filling in the centre of the rolled dough.
  • Cover the filling with the dough by slowly stretching it over the filling.
  • Seal the ends and remove excess dough, roll gently again with a rolling pin.
  • Meanwhile heat some oil for deep frying.
  • Fry the kachoris in batches on a medium high flame.
  • Cook for about 6 to 10 minutes till they turn golden brown.
