Ingredients

  • 300 gms - Brinjal
  • 2-3 (medium sized) - Onions
  • Coriander powder, chilli powder, salt to taste
  • 1 cup - Rice
  • 2.5 cups - Water
  • 2 tbsps - Cooking oil
  • Finely chopped Coriander leaves

How to Make Vaangi baath (brinjal rice)

  • Chop the brinjal and onions.
  • Saute the onions till they get transparent.
  • Then, add the brinjals.
  • Add the spice powders and saute the curry for 4-5 minutes.
  • Cook the rice in the quantity of water mentioned above. Do not overcook.
  • Allow it to cool and then mix it with the curry.
  • Garnish with finely chopped coriander leaves.
  • Serve hot.
